All fruit ingredients are 100% Australian, together with the raw unrefined sugar. The organic coconut sugar, oil and ginger ingredients are sourced from the South Pacific including Fiji and Papua New Guinea.
Why do you use a blend of coconut sugar and coconut oil?
We use a blend of Australian unrefined raw sugar and coconut sugar to create a rich wholesome caramel flavor. The coconut oil further defines the jam composition.
Our use of coconut oil contains medium chain triglycerides (MCT), which are known to support the body burn energy from fat cells (rather than carbohydrates).

Why do we use coconut sugar and coconut oil?
We use a blend of Australian unrefined raw sugar and coconut sugar from the South Pacific to create a rich caramel flavor. Our use of coconut oil provides a small amount of medium chain triglyceride (MCT), which is known to support the body to burn energy from fats rather than glucose, and functions to help preserve the integrity of the jam composition.
The United Nations’ Food and Agriculture Organization named coconut sugar the most sustainable sweetener in the world in 2014. The trees use minimal amounts of water and fuel, especially compared to sugar cane production, and produce for about 20 years. It has no artificial ingredients, is low GI – less than half of refined sugar and syrups and is not chemically altered in any way so it’s much better for your health.
Why do we use two sugars?
We wanted to use coconut sugar in its entirety however it is cost prohibitive and the batch runs we did were very dense like a molasses, masking the fruity flavours. We could have used fruit juice and/or a syrup such as agave or rice malt however sourcing of these products means either using costly ingredients and/or increasing the water content, compromising on the stability of the jam once opened.
Our sugar blend is a perfect mix that achieves optimum composition of a quality jam and provides a healthier alternative to white sugars commonly used in jam manufacturing.

We source upcycled fruit from Australian farmers. Up-cycle is another way to describe high quality perfect fruit with an imperfect shape or size that doesn’t get put forward to market or that the major retailers don’t buy due to oversupply.
